Spring Barrel Tasting  April 27 & 28   11am to 5 pm

Join us on April 27-18th for Spring Barrel Tasting from 11 am to 5 pm.  We will be tasting samples of our 2020 Roza Hills Estate Black Magic and our 2020 Roza Estate Cabernet Sauvignon.  As a bonus, we will pouring our 9 year old Vitis Brandy from the barrel.  As usual, we will be serving our delicious brick-fired pizza.   Come for the Wine & Food, Stay for the view!

Join us for a winemaker luncheon on Sunday, June 9th at 11:00 am during the Taste Rattlesnake Hills Event with the world- famous chef, Fat Pastor, and our winemaker, Bill Ammons. 

Raw Bar:                    Charcuterie, Crab Legs, Shrimp, Oysters

 

Course 1:                   Gnocco Fritto w/ Mortadella, Fresh Ricotta & Balsamic Reduction 

 

Course 2:                   Carpaccio di Salmone - Wild Salmon, Lemon, Parsley, Caperberries

 

Course 3:                   Tuscan Benedict - Focaccia, Wood-Fired Filet Mignon, Prosciutto, Soft Egg, Smoked Porter Hollandaise,                                       Microgreens

 

Course 4:                   Cinnamon Bun, Bone Marrow Caramel, Creme Fraiche, Fennel Pollen, Toasted Hazelnuts

The Luncheon starts at 11am on June 9th and costs $120. Price includes 20% gratuity but not the tax.

About the Fat Pastor

Shawn Niles, also known as The Fat Pastor, is a culinary entrepreneur based out of Yakima, Washington. He is known for his appearances on MasterChef and Netflix’s Best Leftovers Ever. 

 

His projects include the nations first legal underground dining club, Bite Club, which also partners with the World Food Championships and promotes culinary throwdown competitions. 

His non-profit arm, The Red Beard Foundation, includes a free business and culinary school for  at-risk youth called Urban Kitchen. 

 

Shawn has had the privilege of working and interacting with some of the best chefs in the world, on and off the screen, including the world-renowned Massimo Bottura, Gordon Ramsay, and Mark Miller the original executive chef of Chez Panisse, among others. 

 

Shawn’s culinary point of view would be best described as Global Comfort Food, as traveling the world and learning about various cultures, translating that for others is what brings him joy. Even greater joy comes from working with his 9 year old son Asher, The Fat Pastor Junior, who is an up and coming celebrity chef in his own right, having been featured on MasterChef Junior.

 Mr. Ammons was raised in the Puget Sound region and attended Whitman College in Walla Walla, WA. He has worked in all aspects of the beverage production industry producing Wine, sparkling wines, fermented fruit ciders, sparkling waters and Boutique Sodas.  

​

From 1987 to 1988,  Bill worked as the Cellar Master at the Haviland Winery  under Winemakers Lou Facelli and Anne Rafetto.  In 1988,  he became the Cider Maker for Spire Mountain Ciders who produced up to 30,000 cases of naturally fermented fruit ciders annually, In 1988, he was promoted to the  Assistant Winemaker for Silver Lake Winery  working with Brian Carter, Peter Bos and Cheryl Barber-Jones. Subsequently, Bill was promoted to Associate Winemaker in 2000 and Head Winemaker for Silver Lake and Glen Fiona wineries in August of 2004.  Today, Bill is the General Manager/Winemaker/Distiller for all things at our production facilty in Zillah, WA. His wines are world renown winning numerous awards. He is now celebrating his 34th year at Silver Lake Winery
